Intended Function:
Functions as a preservative (antimicrobial), protecting water-containing formulations primarily against yeasts and molds, with weaker activity against bacteria. Its activity is pH-dependent and strongest in acidic systems (effective below roughly pH 6, optimal near pH 4.4), so it is used in low-pH products and is commonly paired with a second preservative such as sodium benzoate for broad-spectrum coverage.

Safety Analysis
Potassium Sorbate is among the mildest and best-studied cosmetic preservatives. The FDA affirms it as GRAS for food (21 CFR 182.3640); the EU permits it as a cosmetic preservative under Annex V at up to 0.6% (expressed as sorbic acid); and the Cosmetic Ingredient Review (CIR) Expert Panel concluded that sorbic acid and potassium sorbate are safe as used in current practices of concentration. It is practically nontoxic, non-mutagenic, and at most only slightly irritating to skin and eyes even at concentrations up to 10% — well above typical cosmetic use levels of around 0.1-0.5%. Higher concentrations can cause transient, non-immunologic tingling or stinging in some individuals, and sensitization has rarely been reported, but at normal use levels it is well tolerated. It performs best at low pH and benefits from a chelator and antioxidant to protect against oxidation and discoloration over shelf life.
